Warning! These Chunky Monkey Protein Balls are addicting. They are perfectly portion, protein packed, and way too delicious. You will be popping these bites any chance you get!
There is no better combination than banana, peanut butter and chocolate, am I right?! While I was going to college there was a smoothie place across the street from my dorm. I would often run across the street, dogging typical Boston traffic, just to get my favorite smoothie with the same combination of flavors. It was an amazing treat that I probably enjoyed too often. Now that I look back, foods I used to think were somewhat healthy for me, were anything but. Just because it has the word “smoothie” or “shake” does not make it good for you. Be careful! I know this particular smoothie was packed full of whole milk, sugary peanut butter, and loads of chocolate syrup. But, dang…it was addicting (as many fast food/junk food places are). Now that I am much more conscious of what I put into my body and the effect it has, I tend to stick to my homemade versions of snacks. That way I know what is going into them and I don’t have to worry about there being dairy, too much refined sugar, or gluten in the foods I consume.
Recently I decided to make a quick snack with the same mix of flavors that I loved so much, but with less sugar, fat, and calories. These no bake Chunky Monkey Protein Balls turned out just how I hoped. They are perfectly soft and chewy, with pops of crunch from dried banana chips. There is no way you can walk away with just one!
Not only are these protein balls easy to make, but they are no-bake as well. My kind of recipe! In a large mixing bowl, you will combine 1 cup of oatmeal, 1/4 cup flax seeds and 1 scoop of vanilla protein powder. Next, stir in 1/2 cup natural peanut butter (creamy) and 1/3 cup of honey until you have a fairly smooth consistency. Add in 1/4 cup of dried banana chips (broken into pieces) and 1/4 cup of semi-sweet chocolate chips. Make sure all the ingredients are well integrated, then start to form small balls by hand and place them on a baking sheet or large plate. Place them in your refrigerator or freezer to firm up (approximately 15-20 minutes), then you’re done!
Protein packed, portable, and perfect for your entire family! These Chunky Monkey Protein Balls will have everyone going ape for snack time.
