I always like to serve something cool and crisp at a big gathering, especially during the summer. It gives people a great alternative from the heavy burgers, potato salads, and casseroles often piled on party tables. Even though I love a simple salad, I try to mix it up and not bring the same old garden salad or chopped veggie tray to every party. We all know it gets old after a while. Plus, I don’t want to be “that person” who always brings the boring healthy side dish that people feel obligated to eat. Eating healthy should be just as yummy!
This recipe is very quick to throw together, but the longer you let it sit in the refrigerator to marinate the better! To begin, chop 3 cucumbers, 1/2 red onion, 2 tomatoes and place all the ingredients into a large bowl. Next, add 1/2 cup white wine vinegar, 1 cup water, 1/4 cup white sugar, 1/4 cup vegetable oil, and 1/2 tsp salt & pepper. Stir well and place in your refrigerator overnight or as long as possible until you are ready to serve. Simple as that! I love easy recipes like this!
- 3 cucumbers
- 1/2 red onion thinly sliced
- 2 tomatoes
- 1/2 cup white wine vinegar
- 1 cup water
- 1/4 cup white sugar
- 1/4 cup vegetable oil
- 1/2 tsp salt & pepper
- Chop cucumbers, onion, tomatoes and place in a large bowl.
- Add remaining ingredients and stir well.
- Place in refrigerator overnight or as long as possible. (The longer the vegetables have to soak up the flavors the better).
