These Easy Pickled Onions are the perfect addition to your next backyard BBQ!
Oh, how I love onions! I’m pretty sure they make anything taste better….salads, pasta, tacos, sandwiches, burgers…I could go on for days. But when it comes to fulfilling all your topping needs, these pickled onions are the way to go.
I am all about making recipes as easy as possible. This one is no exception. With six simple ingredients, that are more than likely already in your kitchen, you will have yourself a delicious addition to any meal.
Start by slicing 1 red onion as thin as possible. (I like to use a mandolin slicer for this. It makes the slices more even.) Pack the onions into a jar as tightly as possible.
Next, in a small bowl, combine 1 cup + 2 Tbsp of apple cider vinegar, 2 Tbsp sugar, 2 tsp salt and 1 cup of water. Whisk the ingredients together until the sugar has dissolved into the liquid.
In your jar, add 1 tsp of peppercorns along with the pickling liquid. When you are finished, seal the jar and place it in your refrigerator for at least 3 hours. The longer you let it sit, the better!
Store them in an airtight container in your refrigerator for up to 4 weeks (if you don’t eat them all by then).
