If you haven’t tried grilling sweet potatoes then, my friend, you are missing out! Tender on the inside, while crispy on the out, they are the perfect side dish to any meal. Below are two of my favorite versions of grilled sweet potatoes that will have you and your family fighting over the last piece every time!
Why sweet potatoes you ask? I prefer sweet potatoes over white potatoes because of their nutritional value. Both sweet potatoes and white potatoes provide a rich source of starch and dietary fiber. But, sweet potatoes have a much higher value of Vitamin A and C, with less calories and carbs (despite having more sugar).
My two go-to recipes for grilled sweet potatoes are “Sweet & Spicy” and “Cilantro Lime.” It’s hard to say which is my favorite. I often make both recipes on the same day so that everyone is happy and can choose the version they prefer. But secretly it’s because I always want to eat both! The “Sweet & Spicy” recipe is a perfectly combined mixture of light brown sugar and cayenne pepper. Don’t take the title lightly, these potatoes definitely have a kick of heat to them. It took my husband by surprise when he tried them. If you don’t want yours to be too spicy, you can dial back on the cayenne pepper added in the recipe. My “Cilantro Lime” recipe is a fresh tangy version that is oh so addicting. It’s hard to find a better duo than cilantro and lime on anything!
I start both recipes the same way by microwaving the potatoes for about 5 minutes. Sweet potatoes are super hard to cut. By microwaving them for a few minutes, the potatoes will soften just enough so that slicing is easier (and safer). From here, I cut the potatoes into 1/4 inch thick slices, drizzle them with a little olive oil, and cook on the grill for about 5 minutes on each side (or until you have grill marks and the potatoes become tender). Once the potatoes begin to have grill marks, I divide up the amount of potatoes I want for each recipe and finish up by following the specific directions for each version.
For the “Cilantro Lime” potatoes you will remove the potatoes and add the vinaigrette over top the potatoes before serving. For the “Sweet & Spicy” potatoes you will continue to grill them a little longer, while adding the brown sugar cayenne mixture over top. This will create a yummy glaze thanks to the heat of the grill.
