I don’t know about you, but I am always looking for something easy to make for lunch. Typically, I end up having a protein shake on the go, or a handful of nuts when I have the time. Thankfully this chicken salad makes a delicious, quick meal. It’s so easy, and always a favorite!
If you love chicken salad, then you are going to go ga-ga for this lighter version. It is full of simple, clean flavors and has the perfect texture. I love to stuff it in lettuce leaves, dip crackers in it, or just eat it alone. Eating healthy never tasted so good!
To create my Leftover Light Chicken Salad, start by chopping 1 medium apple and 2 celery stalks. (I like to use gala apples, but you can choose your preferred type).
In a large mixing bowl, place chopped apple and celery, along with 4 cups of your leftover chicken (shredded), 1 1/4 cup greek yogurt (plain), 1-2 Tbsp dijon mustard, 2 Tbsp lemon juice, 1/2 cup golden raisins, and a dash of salt/pepper. Mix your ingredients well so they are evenly disbursed. Place in an airtight container and put in your refrigerator until you are ready to serve.
