If you are a mushroom fan, like I am, then you will love this recipe. Marinated Cocktail Mushrooms are the perfect appetizer for any gathering. Just like a cheese and fruit platter, you will want these little bites to become a staple at all of your future parties.
I don’t know about you, but when I go to a cocktail party or any social gathering I am usually looking for something new and exciting on the food table. The usual suspects sitting out are shrimp cocktail, cubes of cheese, fruit, and crackers. Talk about booooring! This is the exact reason why I love to whip up a batch of these tasty mushrooms for my parties. They are super simple to make and always a hit! The tangy marinade gives the mushrooms the perfect punch and a sure way to liven up your food spread.
To create this easy, set and go hors d’oeuvre, start by bringing a pot of salted water to a boil. Add 16 oz of baby bella mushrooms to the water and cook for approximately 4 minutes. Drain the water and set the mushrooms aside for now. To create the marinade, combine 1/2 cup of olive oil, 1/3 cup of white wine vinegar, 1/2 red onion- chopped, 1 Tbsp of minced garlic, 1 tsp of dark brown sugar, 1 tsp of peppercorns, 1 tsp of red pepper flakes, 1 tsp of dried oregano, and 1 tsp of dried parsley. Whisk the ingredients together and set aside.
Lastly, you will place the mushrooms and marinade in an airtight container, and place in your refrigerator. Let the mushrooms marinate for at least 3 hours…but the longer, the better. I sometimes make this recipe the night before a party, so that they have plenty of time to soak up all the amazing flavors in the marinade.

- 16 oz whole baby bella mushrooms
- 1/2 cup olive oil
- 1/3 cup white wine vinegar
- 1/2 red onion- chopped
- 1 Tbsp minced garlic
- 1 tsp dark brown sugar
- 1 tsp peppercorns
- 1 tsp red pepper flakes
- 1 tsp dried oregano
- 1 tsp dried parsley

- In a mixing bowl, combine remaining ingredients to create marinade.
- Place mushrooms and marinade in an airtight container, and place in a refrigerator.
- Let mushrooms marinate for at least 3 hours. The longer the better!
