My friends love these Nutty Lemon Energy Balls and often request them when they come over. They are naturally-sweetened, vegan, gluten free, and perfect in every way. But with these Nutty Lemon Energy Balls, you know exactly what is going into them and no longer need to worry about finding a healthy after school snack. Your kids will devour them!
In a food processor mix together, 1 cup raisins, 3 Tbsp lemon juice, 1/2 cup mixed raw nuts, 1 Tbsp ground flax seeds and 1/2 cup unsweetened coconut flakes. Once your texture is fairly smooth, scoop mixture into small balls and place on a plate or baking sheet. If you have extra coconut flakes, you can roll the balls in it as well. Place the balls in your refrigerator to set, approximately 20 minutes, then you’re done!
