Not all trail mixes are created equal. All too often they are covered with sugar or way too much salt. But this recipe is as clean as it gets, without lacking flavor. It’s the perfect way to snack during a busy week or on a long road trip.
Where are my moms at? You all know how strange cravings can hit when your pregnant. Some end up craving sugary sweets, while others want to consume anything salty they see. While I was pregnant with my son, there were two things I craved. Either a big fresh salad or airpopped popcorn. It would be a constant struggle choosing which one I would end up eating, haha. I knew eating a salad would be much more beneficial nutritionally, but man…I love to sit down with a big bowl of popcorn. No butter, oil, or salt. Just good old air popped corn!
Now that our son Neal has arrived, and I can’t get away with just eating a big bowl of popcorn, this trail mix is a light snack I love to enjoy. I make a big batch and am set for the week, or longer. Nothing but raw, unsalted mixed nuts, airpopped popcorn, and some super healthy goji berries mixed in. There are no other added ingredients, just a simple, clean, healthy trail mix everyone will love.
Goji berries, also known as the wolfberry, are super bright colored berries that come from a plant native to China. They contain all essential amino acids and have the highest concentration of protein of any fruit. Not only are Goji berries a natural anti-inflammatory, but they have anti-bacterial and anti-fungal compounds as well. I love to add them to oatmeal, cereal, and sometimes top my morning toast with a few.
To create this quick and easy trail mix, pop 1 cup of popcorn kernels in an air-popper. This will yield about 16 cups of popped popcorn. If you do not have an air-popper, feel free to purchase unsalted/ no butter popcorn. Next, place the popcorn in a large bowl and add 1 cup raw mixed nuts and 1/3 cup of goji berries. Mix ingredients and enjoy!

- 1 cup raw mixed nuts
- 1/3 cup goji berries
