Start with poaching 4 eggs. (I prefer to use a nonstick egg pan, which holds the eggs above boiling water to steam them, instead of cooking them in the water. Cook for approximately 3 minutes, or until they are cooked to your preference.) While eggs are poaching, slice two english muffins in half and toast.
Slice 3-4 roasted red peppers and avocado into thin strips.
Chop approximately 3 tablespoons of fresh cilantro.
When you are ready to assemble your dish, place the 4 english muffin halves on a serving dish or plate.
Place your preferred amount of avocado and roasted red pepper slices on the toasted muffins. Carefully place 1 poached egg on each muffin.
