Ahhh, summer time! Nothing beats sunshine, blue skies and warm temperatures. That is unless you are training for a race and the heat makes for a much harder workout.
I have officially signed up for my first duathlon since giving birth and could not be more excited. I have participated in running races over the past few months, but this will be my first multi-sport race in a while. It is a run-bike-run event, which calls for a lot of outdoor training sessions. Yes, even with the kids in tow. (I know he looks thrilled to be in the stroller. I promise he enjoys it, haha.)
With that being said, I am always looking for new ways to cool down and recover after a long ride, run, or both. My Super Fruity (N)ice Cream is a light treat that has no dairy and is packed with antioxidants, electrolytes and vitamins B & C, thanks to the addition of Emergen-C. The Super Orange flavor makes this recipe insanely fruity and tastes amazing after working up a good sweat.
Emergen-C can be found at your local Walmart in the vitamin aisle. However, my Walmart had a separate, special display in front of the pharmacy. So keep a look out!
To create this tasty treat, cut 3-4 ripe bananas into small chunks and place them in your freezer. After a few hours, combine the frozen bananas and 1 cup of coconut milk in a food processor or blender. Pulse until you have a creamy consistency. Next, add in 1/2 cup of frozen peaches, 1/2 cup of frozen raspberries, and 1 packet of Super Orange Emergen-C. Blend the ingredients until all the fruit is broken down and you have a smooth texture. You can serve it immediately for a “soft serve” or you can pour the mixture into an airtight container and return it to the freezer for a couple hours to create a firmer consistency.
Perhaps you are not planning on a race this summer. Maybe you have a bucket list of other things you want to do instead. Camping, road trips, or simply trying to not go crazy with the kids home from school. Whatever your goal is for the break, make sure to incorporate some healthy activities and snacks for yourself to enjoy. Purchase Emergen-C at your local Walmart and stay energized no matter what comes your way!

- Add 1/2 cup of frozen peaches, 1/2 cup of frozen raspberries and 1 packet of Super Orange Emergen-C.
- Blend ingredients.
- Serve immediately for a "soft serve" or pour the mixture into an airtight container and return to freezer for a firmer "ice cream" consistency.
