There is just something about a warm vegetable hash that makes me happy. As I've said before, I love having different textures in a meal, especially the addition of crunchy nuts and tangy craisins in this Broccoli Sweet Potato & Craisin Hash.

HOW DO I MAKE BROCCOLI SWEET POTATO & CRAISIN HASH?
Start by chopping 1 medium sweet potato, ½ red onion and ½ head of broccoli into bite sized pieces. Place the vegetables, along with ½ cup of craisins and 1 cup of whole cashews into a large mixing bowl.
Toss them with ¼ cup of olive oil and 2 tablespoon of white wine vinegar. Then pour the vegetables onto a prepared baking sheet.
Next, top the vegetables with the following dried ingredients:
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon ground thyme
- dash of salt/pepper
I prefer to put the dry seasonings on the vegetables once they are on the baking sheet. I find that if I season the veggies when they are in the bowl, most of the seasonings end up sticking to the bowl instead.
Bake at 350 degrees F for approximately 30 minutes, stirring every 10 minutes or so.

Ingredients
- 1 medium sweet potato
- ½ red onion
- ½ head of broccoli
- ½ cup craisins
- 1 cup whole cashews
- ¼ cup olive oil
- 2 tablespoon white wine vinegar
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon ground thyme
- dash of salt/pepper
Instructions
- Chop vegetables into bite sized pieces.
- Place vegetables along with craisins and cashews into a large mixing bowl.

- Top with remaining dried ingredients.
- Bake at 350 degrees F for approximately 30 minutes, stirring every 10 minutes or so.
