I have a super simple recipe for you today! This delicious Chickpea Salad is one of my favorite make-ahead meals. It takes no time at all and is perfect for the entire family.
Even when it's cold outside I like to enjoy a fresh, cool dish for dinner. It mixes things up in the winter, when every meal seems to be heavy and filling.
Don't get me wrong, I love a hearty, home-cooked meal. But sometimes, it's just a little too much.
I don't know about you, but my body needs a break or a reset every once and a while, especially throughout the holidays. If you feel the same way and want something lighter, meat free and INSANELY easy to make, this Chickpea Salad is for you. My family likes to enjoy it as the main course, but feel free to use it as a side dish as well.

What ingredients do I need?
- 2 16 oz cans garbanzo beans
- 1 tablespoon cumin
- 1 teaspoon chili powder
- 4 tablespoon olive oil
- ⅓ cup lemon juice
- 3 scallions
- 1 red bell pepper
- ⅓ cup parsley
How do I make Chickpea Salad?
Start by opening and draining two 16 oz cans of garbanzo beans. Place the beans in a large bowl along with 3 chopped scallions, 1 chopped red bell pepper and ⅓ cup of chopped parsley.
Add the following ingredients and stir:
- 1 tablespoon cumin
- 1 teaspoon chili powder
- 4 tablespoon olive oil
- ⅓ cup lemon juice.
Make sure all the ingredients are well mixed. Store the salad in an air tight container and place in your refrigerator until you are ready to serve. Easy as that!

Chickpea Salad
Ingredients
- 2 16 oz cans garbanzo beans
- 1 tablespoon cumin
- 1 teaspoon chili powder

Instructions
- Open and drain the cans of garbanzo beans.
- Place the bean in a large bowl.
- Chop 3 scallions, 1 red bell pepper and ⅓ cup parsley.
- Add the chopped ingredients to the bowl and stir.
- Add 1 tablespoon cumin, 1 teaspoon chili powder, 4 tablespoon olive oil and ⅓ cup lemon juice.
- Mix the ingredients well, store in an air tight container and place in your refrigerator until you are ready to serve.
