Grilled Asparagus Wrap - best lunch ever! This veggie wrap recipe come together in minutes and you can make them ahead!
I'm always looking for a fast, easy meal for lunch. The same old ham and cheese sandwich never seems to hit the spot.
But this fresh veggie wrap with jalapeno hummus, grilled asparagus, and crunchy cabbage fills me up without weighing me down. Plus, it's perfect for individuals who are looking to incorporate more plant-based meals to their diet.
What ingredients do I need?
- 1 bunch of asparagus
- 1 bag of pre-made cabbage mix
- 2 tablespoon olive oil
- salt/pepper
- Jalapeno Hummus (I use my hummus recipe, and add approximately ¼ cup of jalapenos to it)
- Your favorite type of tortilla wrap
How do I make a Grilled Asparagus Wrap?
While your grill is getting hot, prepare the asparagus. First break off and throw away the tough ends of the asparagus and season the rest with olive oil and salt & pepper.
Once the grill is hot, place the prepared asparagus onto the grill and cook for approximately 5-10 minutes. Turn the asparagus often until it begins to get grill marks or you have your desired tenderness. Carefully remove all of the asparagus from grill and set aside.
While the asparagus is cooling, I prepare my jalapeno hummus. I prefer to use my Easy Hummus Recipe and add approximately ¼ cup of jalapenos to it.
To form the wrap, grab your favorite tortilla and spoon on approximately 2 tablespoon of jalapeno hummus. Then, place your desired amount of the grilled asparagus onto wrap.
Lastly, I add approximately ¼ cup of the bagged cabbage mix. (No need to add anything to the cabbage mix, it is perfect and tasty as it is). Gently roll your tortilla up into a wrap, and enjoy!
Feel free to experiment! Change up the grilled vegetables you use based on your family's preference, as well as the bread. I like to use gluten-free tortillas, but pita bread and regular bread work great as well.

- Turn on grill, so it can get nice and hot.

- Remove asparagus from grill and set aside.
