This Light & Fresh Cucumber Cabbage Salad is easy to prepare and bursting with flavor!

There are countless versions of cucumber salads out there, and to be honest, this recipe isn’t anything innovative or new. It's just super fresh and delicious, so I wanted to share it with you.
With minimal prep, it makes an easy, budget-friendly dish, perfect for a potluck, family dinner, or cookout.
WHAT INGREDIENTS DO I NEED?
- ½ head of cabbage chopped
- 1 cucumber chopped
- 6-8 green onions chopped
- ¼ cup olive oil
- 1 lemon
- ⅛ cup fresh dill
- 2 tsp white wine vinegar
- dash of salt/pepper more if desired

HOW DO I MAKE LIGHT & FRESH CUCUMBER CABBAGE SALAD?
What do you need to make a great salad? Not much, really. Start by chopping the following ingredients:
- ½ head of cabbage
- 1 cucumber
- 6-8 green onions

Next, combine ¼ cup olive oil with the juice of 1 lemon, ⅛ cup fresh dill, 2 teaspoon white wine vinegar and a dash of salt/pepper.

In a large bowl, mix together the chopped vegetables and dressing. Add additional salt and pepper, if desired.
This cucumber salad tastes better when chilled. I like to place it in the fridge for at least one hour before serving.

Refreshing cucumbers and crunchy cabbage, drizzled with a lemony- dill dressing is the perfect complement to any meal. Serve with fish, chicken or enjoy it on it's own. Either way this Light & Fresh Cucumber Cabbage Salad is satisfying with every bite.

Ingredients

Instructions
- Start by chopping the following: cabbage, cucumber, green onions.
- Next, combine olive oil with the juice of 1 lemon, fresh dill, white wine vinegar and a dash of salt/pepper.
- In a large bowl, mix together the chopped vegetables and dressing. Add additional salt and pepper, if desired. Store in refrigerator for at least an hour.
