This bread didn’t last a week in my house, and it wasn’t because of my husband. I totally devoured this loaf all by myself…and I don’t regret it one bit! It is sugar free, gluten free and dairy free. In other words, the holy trinity in my eyes. With chopped dates, cranberries and crunchy mixed nuts, breakfast just got a little easier to wake up for. I don’t know about you, but when I get up in the morning the last thing I want to do is make a big, tedious breakfast. I’m all about simple, fast, get to the point recipes. No fuss and no mess. Which is why I love this bread recipe. There is no kneading, chilling or bread maker required for this dough. It’s a mix and pop in the oven kind of recipe. Start by preheating your oven to 350 degrees. In a large bowl, mash 2 ripe bananas until you have a smooth texture. Add in 2 cups of gluten free flour, 1 tsp of baking powder and 1/4 tsp of salt. Next, mix in 2 eggs and 1/4 cup of melted coconut oil. Make sure not to over mix the dough, just enough to get the ingredients integrated. Last you will fold in 1/2 cup cranberries, 8-10 chopped dates, 1 cup of roughly chopped mixed nuts and 3 Tbsp of flax seeds. When you are ready to bake, pour the dough into a prepared bread pan and bake for approximately 40 minutes. Remove from oven and let cool.

- 1 cup mixed nuts- chopped
