If you are looking for the perfect side dish to your summer BBQ, look no further. This healthy, light cucumber salad is a refreshing dish to serve at any event!

I usually like to serve something cool and crisp at a big gathering, especially during the summer. It gives guests a nice alternative from the heavy burgers, potato salads, and casseroles often piled on party tables.
Even though I love a simple salad, I try to mix it up and not bring the same old garden salad or chopped veggie tray to every party. Eating healthy should be just as yummy!

This recipe is very quick to throw together, but the longer you let it sit in the refrigerator to marinate the better!
WHAT INGREDIENTS DO I NEED FOR EASY CUCUMBER SALAD?
- 3 cucumbers
- ½ red onion thinly sliced
- 2 tomatoes
- ½ cup white wine vinegar
- 1 cup water
- ¼ cup white sugar
- ½ teaspoon salt & pepper

This refreshing and tangy side salad is a great accompaniment to any grilled meat, chicken, or seafood! It's also a great way to use up that summer cucumber harvest.
HOW DO I MAKE EASY CUCUMBER SALAD?
Chop the cucumbers, onion, tomatoes and place in a large bowl.
Add remaining ingredients and stir well.
Place in refrigerator overnight or as long as possible. (The longer the vegetables have to soak up the flavors the better).

Easy Cucumber Salad
Ingredients
- 3 cucumbers
- ½ red onion thinly sliced
- 2 tomatoes

Instructions
- Chop cucumbers, onion, tomatoes and place in a large bowl.
- Add remaining ingredients and stir well.
- Place in refrigerator overnight or as long as possible. (The longer the vegetables have to soak up the flavors the better).
Notes
**Use a slotted spoon to drain out the excess liquid when serving.
