Looking to maximize your good luck in the new year? Make a batch of my simple and delicious Hoppin' John. A traditional southern dish full of black-eyed peas, rice, turkey bacon and veggies.
I'm busting out my southern roots for y'all today. Most likely because I am missing home after not going back to Texas for the holidays. But, one thing for sure is if you can't go home, you can always cook like you're at home!
Hoppin' John is a fixture on many southern menus. Usually served as a side dish, but totally delicious on its' own. It is a very basic recipe and perfect for New Years Day, when cooking for hours is that last thing you want to do.
Start by sautéing the following ingredients in a large pot:
- 2 tablespoon olive oil
- ½ yellow bell pepper
- 2 celery stalks
- 1 cup yellow onion
- 3-4 strips of turkey bacon
I like to use turkey bacon to cut down on the fat in this recipe, but feel free to use traditional bacon, if desired.
Once the ingredients are slightly tender, add 2 teaspoon minced garlic and continue to sauté for anther 2-3 minutes. (Careful, not to burn the garlic.)
Next, add the following ingredients:
- 1 16 oz can of black eyed peas (drained)
- 1 tablespoon pepper flakes
- 1 teaspoon salt & pepper
- 5 cups water
- 1 ½ cups white rice
Turn your stove to a low heat and continue to cook until the rice has absorbed all of the water (approximately 20 minutes).
This easy to make, charmingly southern dish will soon become your family's favorite New Years Day tradition. Start the year off right with a batch of my Hoppin' John.
