This quick and easy Pineapple Poke Bowl is light, fresh and insanely flavorful. It is the perfect way to stir up the fun with dinner tonight!

Over the past few weeks, we have been eating a lot of salads and other "boring" dishes (mainly because I haven't been in the mood to cook). Don't get me wrong, I love to cook and never get sick of a good salad. But sometimes I want a recipe that is a little more fun, especially one that is fast and simple.
Since Poke Bowls are all the craze right now, I decided to give one a try myself. They are basically a deconstructed sushi roll anyways, and I loooove sushi, so what is there to lose?

WHAT INGREDIENTS DO I NEED?
- 18 oz Sticky White Rice
- 9 oz sushi grade ahi tuna (I used this Ahi Tuna Poke Kit from Walmart)*
- 1 cup chopped cucumber
- 1 20oz can Pineapple Chunks
- 12 oz shelled Edamame
- ¼ cup chopped scallions
- Nori/ Seaweed
- Sesame Seeds
*If you do not use the same Ahi Tuna kit that I used, simply find some sushi grade tuna steaks, cut into small cubes and toss with the following: 2 tablespoon Soy Sauce, 1 teaspoon sesame oil, 1 teaspoon seasoned rice vinegar
Optional Toppings:
- Chili oil
- Fresh Ginger
- Avocado

HOW DO I MAKE A PINEAPPLE POKE BOWL?
I start by cooking rice and frozen edamame according to package instructions. I like to use any kind of instant rice in this recipe because it is ready in just 5 minutes. (To be honest, it's a pantry staple in my house and a great foundation to any meal.)
While the rice is cooking, I chop my other ingredients, and open & drain the pineapple chunks. The addition of pineapple is to die for. The sweet tangy flavor is a great compliment to the bowl.
Prep the sushi tuna according to the package instructions, or according to my notes below the ingredient list.
Once the rice is finished cooking, place desired amount in your bowl. Then add any amount of the toppings, as you wish. This simple recipe is all about how you like your poke bowl. Make it your way!
Please note, if you are pregnant, or not a fan of tuna, feel free to swap it out for cooked and cooled shrimp.

Trust me when I say quick meals can pack BIG flavor. My Pineapple Poke Bowl is the ultimate one bowl feast. Add it to your recipe book today!
