Nothing says fall quite like a warm slice of Greek Yogurt Pumpkin Bread. Enjoy it for breakfast, as a snack on the go, or even as a little dessert after a long day!
WHAT INGREDIENTS DO I NEED?
- 1½ cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoons cinnamon
- ¼ teaspoon allspice
- 2 eggs
- ½ cup plain Greek yogurt
- ½ cup canola oil
- 1 cup canned pumpkin puree
- ½ cup brown sugar packed
- ½ cup sugar

If you don't have brown sugar, you can simply make your own by combining white sugar and molasses.
Light Brown Sugar: 1 cup of white sugar with 1 tablespoon of molasses.
Dark Brown Sugar: 1 cup of white sugar with 2 tablespoons of molasses.
Use a fork to mix the ingredients together. To be honest, I use my hands to mix so I can make sure there are no lumps in the sugar.

HOW DO I MAKE GREEK YOGURT PUMPKIN BREAD?
Preheat oven to 350°. Prepare a 9 x 5 loaf pan with parchment paper or spray well with nonstick cooking spray.
In a bowl, whisk together flour, baking soda, salt, cinnamon, and allspice.
In a separate bowl, mix together the egg, oil, pumpkin puree, both sugars and the Greek yogurt until smooth.

Combine the wet ingredients into the dry ingredients.
Pour the batter into the prepared baking pan and bake for approximately 50 minutes or until a toothpick comes out clean.
*If the top begins to brown, you can cover with aluminum foil if necessary.
Carefully, remove the pumpkin bread from the oven and let cool before turning out on a wire rack and slicing.
