This juicy {Slow Cooker} Herb & Citrus Cornish Hen recipe is one you will never forget!

Are you someone that loves to have people over for Thanksgiving, but hates being caught up in the kitchen the entire time? I feel your pain. Thanksgiving never really ends up being the relaxing, fun holiday that I always hope it to be.
This year, my husband and I won't be able to make it to Dallas for Thanksgiving. That's why we decided to have a "Friendsgiving" and make my {Slow Cooker} Herb & Citrus Cornish Hen instead. It is a simple, no-fail recipe that I can set and go without slaving over the stove all day.

Forget about the traditional baked turkey at Thanksgiving. Put a twist on your holiday and actually have time to enjoy the evening with your friends and family.
WHAT INGREDIENTS DO I NEED?
This list may seem like a lot. But luckily, the ingredients are all simple and cheap!
- 2 Tyson® Cornish Hens
- 1 yellow onion
- 4 celery stalks
- 1 cup carrots
- ¼ cup olive oil
- 1 tablespoon minced garlic
- 2 tablespoon Dijon mustard
- 2 teaspoon dry thyme
- 1 teaspoon paprika
- 2 teaspoon dry parsley
- 1 teaspoon tarragon
- 1 tablespoon dry rosemary
- 1 orange
- 1 lemon
- 1 lime

HOW DO I MAKE HERB & CITRUS CORNISH HENS?
To begin, chop the following ingredients and place them in the bottom of your slow cooker.
- 1 yellow onion
- 4 celery stalks
- 1 cup carrots
In a small bowl combine ¼ cup olive oil, 1 tablespoon minced garlic and 2 tablespoon dijon mustard. In a second bowl, combine 2 teaspoon dry thyme, 1 teaspoon paprika, 2 teaspoon dry parsley, 1 teaspoon tarragon and 1 tablespoon dry rosemary. Using your hands, cover both sides of your Tyson® Cornish Hens with the dried seasonings. *Make sure your hens are completely thawed and dried first.
Next you will slice 1 orange, 1 lemon and 1 lime. Before you place the Tyson® Cornish Hens in your slow cooker, stuff a couple slices of lemon into each cavity. Set the hens on top of the chopped vegetables in your slow cooker and cover with the dijon/olive oil mixture, as well as the remaining slices of fruit. Cover and set on Low for 8 hours or High for 4 hours.
Once the hens are finished cooking, carefully remove and place each of them on a large platter. Surround with the roasted vegetables and enjoy!

Instructions
