Crunchy, tangy and slightly salty, this Lemon Zest Granola will wake all your senses in the morning.
Granola is one of my favorite snacks and always puts a smile on my face. I can pretty much eat it anytime of day, everyday. However, not to seem picky, I do prefer to make my own so that I can control the amount of sugar in each recipe. The only sweeteners I tend to use are either honey, agave syrup or natural maple syrup. No added refined white sugar or brown sugar, necessary.
If you are contemplating making a batch of granola soon, you HAVE to try this recipe. The fresh lemon zest and slight hint of honey is addicting beyond belief!
HOW DO I MAKE LEMON ZEST GRANOLA?
Start by combining the following ingredients in a large bowl:
- 2 ½ cups oats
- zest of 2 lemons
- juice of 1 lemon
- ⅓ cup honey
- 1 tablespoon sea salt
- 2 teaspoon vanilla extract
- 3 tablespoon olive oil
- ⅓ cup chopped pecans
- ⅓ cup chopped almonds
Mix well so everything gets evenly coated. Then, carefully pour the granola onto a prepared baking sheet.
Bake at 325 degrees F for approximately 25-30 minutes, stirring every 10 minutes.
Soon enough your house will be filled with an amazing aroma that you will never want to disappear!
When it is finished, remove the granola from your oven and let cool. It will become more crunchy as it cools, so don't be concerned if it is a little soft when you remove it. You don't want to cook until it becomes crunchy in the oven. If you do, it will end up being over cooked/burnt by the time is cools off.
Instead of the usual store-bought brand, try this bright and fresh Lemon Zest Granola the next time you have a sweet craving.
