This is my new favorite fish recipe! It is super simple to prepare and has so much flavor. They will leave your house wondering if you ordered it from a gourmet restaurant!
Believe me when I say this dish is amazing and easy to throw together. It only takes about 15 minutes to complete. My husband was plesantly suprised by this dish last week. We were both starving and too busy to cook something tedious, so I decided to try something new with what we had in the house. Since we now have a newborn ruling the house, I am all about using up what we have before making the trek to the local grocery store.

I have a whole new respect for mothers that are able to get stuff done around the house, and find time to workout. It’s tough work, but it’s got to be done. I can’t wait to share some tips that have helped me get back into shape and keep my sanity for those crazy days (and nights)!
Back to this amazing fish recipe! I start by preheating my oven to 375 degrees. While the oven is heating up, I mix together 2 Tbsp olive oil, 1 tsp garlic, 1 Tbsp dijon mustard, 1/2 tsp dried parsley, the juice of 1/2 lemon, and a dash of salt and pepper in a small bowl. On a prepared baking sheet, I place 2 tilapia fillets and top each of them with the ingredients I just mixed together in the bowl. Next, I top each fish with panko breadcrumbs (approximately 1/3 cup or enough to compeltely cover the top of fish) and place in oven for approximately 8-10 minutes. Feel free to use gluten-free breadcrumbs, instead of panko, if you want. Right before I remove the fish from the oven, I like to turn oven to high broil for approximately 1 minute to brown the panko. It gives the fish a little more crunchy texture. After you remove the fish from the oven, top each fillet with an additional dash of parsley. This dish is great served with brown rice, salad, or roasted vegetables. Choose your favorite healthy side and enjoy!
- 2 tilapia fillets
- 2 Tbsp olive oil
- 1 tsp minced garlic
- 1 Tbsp dijon mustard
- 1/2 tsp dried parsley
- Juice of 1/2 lemon
- 1/3 cup panko breadcrumbs (or enough to cover top of fish)
- Salt/Pepper to taste
- Preheat oven to 375 degrees.
- In a small bowl, mix together olive oil, garlic, dijon mustard, parsley, lemon juice, salt and pepper.
- On a prepared baking sheet, place 2 tilapia fillets and top with the mixed ingredients.
- Top each fish with panko breadcrumbs and place in oven for approximately 8-10 minutes.
- Turn oven to high broil for approximately 1 minute to brown the panko.
- Once you remove the fish from the oven top with an additional dash of parsley.
