A deliciously nutritious salad channeling some of my favorite Thai flavors, topped with a spicy sweet chili vinaigrette.
It’s that time of year, where everyone is trying to add a little more fruits and vegetables to their diets…myself, included. I’m not going to lie, I know I had one too many cookies over the holidays. But, like many of you, I am all about making sure my New Year starts off on the right foot.
One way I like to keep myself motivated with eating healthy is making my recipes as visually appealing as possible. You know what they say, “You eat with your eyes.” Which is the main reason why I am in love with this new recipe for Thai Salad with Sweet Chili Vinaigrette. It’s beautiful to look at and delicious to eat!
Seriously, I can’t stop, won’t stop making this salad. Full of fresh romaine lettuce, crunchy vegetables and salty cashews, it’s one salad that is anything but boring. The addition of my simple, homemade sweet chili dressing is by far the BEST!
Thanks to Truvia Natural Sweetener, the dressing is easy to make, absolutely delicious and adds just the right amount of sweet and spicy to this dish.

To create this recipe, start by chopping 1 head of romaine lettuce and combine it with 2 cups of shredded cabbage.
Then toss in the following chopped ingredients:
● 4 green onions
● 1/2 large cucumber
● 3/4 cup shredded carrots
● 1/2 green bell pepper
● 1/2 cup fresh cilantro
● 2/3 cup cashews
To create the sweet chili vinaigrette, you will whisk together 1/3 cup + 2 Tbsp white wine vinegar, 3 Tbsp olive oil, 3 Tbsp soy sauce, 2-3 tsp chili flakes (depending on your heat preference), and 6 packets of Truvia Natural Sweetener. You can either toss the salad with dressing or serve separately for individuals to pour themselves. A few optional additional toppings are bean sprouts & shoots.
