As I’ve declared in many of my previous posts, I love Mexican food! Thank goodness my husband does too. If not, we would have some serious issues with cooking at our house. All joking aside, I love to experiment and make leaner versions of my favorite Mexican meals. Using beans or lentils instead of ground beef in tacos is a great way to incorporate lighter options to your meals. One thing that helps make my life easier when creating new meals are the options of gluten free products I get to use from Udi’s. Their tortillas are the perfect substitute for regular flour tortillas when making tacos or burritos. Plus, they don’t fall apart like corn tortillas often do. You can totally load these guys up with your favorite fillings and not worry about having to use a fork after your first bite because it just fell apart in your hand.
Too often are gluten-free products really dense and stiff. Believe me, I have tried many rock hard products out there in my search for a normal soft piece of bread. However, some of my favorite breads are from Udi’s. Their Whole Grain Bread and Everything Inside Bagels are a couple of the best gluten free products I have tried. I had been searching for an “everything bagel” that was gluten free for what seems like forever. I missed having the flax seed, poppy seed, and onion flavors all in one. (Plain bagels just get a little boring after a while). But now that I can easily find them, I am one happy girl!
Now, back to my Mexican Meal Makeover! Using two products by my friends at Udi’s, I have created a couple different recipes that are sure to bring a smile to everyone’s face at your table.
