This delicious and nutritious Slow Cooker Chicken Marsala is bound to be your new favorite weeknight meal.
As I said above, this recipe is great for weeknights, when you're crazy busy and don't have the time to cook. But, it's also perfect for those days when you have nothing going on and just want to curl up in your pajamas with a comforting meal.
I use my slow cooker all the time! It's seriously a saving grace when I know I won't be in the mood to cook. As long as you make sure to give yourself a few moments to prep a couple ingredients, you will be a happy camper once dinner time rolls around.
Juicy chicken and tender mushrooms coated in a flavorful, dairy free sauce, there is no wonder why everyone loves this recipe.
WHAT INGREDIENTS DO I NEED?
- 4 chicken breasts
- 1 tablespoon minced garlic
- 4 cups sliced mushrooms
- 2 tablespoon balsamic vinegar
- 1 cup marsala wine
- ¼ cup water
- salt/pepper to taste
- corn starch (as needed to thicken)
- optional topping: fresh parsley or basil

HOW DO I MAKE SLOW COOKER CHICKEN MARSALA?
Start by placing 4 (thawed) chicken breasts into your slow cooker, and surrounding them with 2 cups of sliced mushrooms. Next add the following ingredients:
- 1 tablespoon minced garlic
- 2 tablespoon balsamic vinegar
- 1 cup marsala wine
- ¼ cup water
- salt/pepper to taste
Set your slow cooker to Lo for approximately 4-6 hours.
When you are about 30 minutes away from serving, add another 2 cups of sliced mushrooms. (I like to do this, so that it adds different textures throughout the dish.)
**At this time, if you want your sauce to be thicker, simply add cornstarch as needed (1-2 tablespoon at a time).
When you are ready to serve, top with your choice of fresh parsley or fresh basil. Either one is a delicious addition to this meal.
