Do you ever get in a rut with dinner? The same rotation of grilled chicken on Monday, spaghetti on Tuesday, salad on Wednesday and so on...we've all been there.
Recently, I found myself making the same old grilled fish recipe that I always do. Why? I have no idea. It was turning into cooking muscle memory. Almost like running the same route everyday. How boring does that get after a while...seeing the same buildings, trees and parks all the time.

I realized I needed a cooking intervention to get out of my rut. Not only for myself, but for my son. I want him to be able to try as many different flavors and textures as possible. I don't want him to get in a rut of eating the same recipes every week, either. (Plus he loves fish, so I knew this recipe for Basil Butter Glazed Salmon would be a win.)
WHAT INGREDIENTS DO I NEED?
- 3 salmon fillets
- 3 tablespoon butter
- 1-2 lemons (Juice of 1, plus additional for garnish)
- 1 ½ teaspoon minced garlic
- 4 tablespoon olive oil
- ¼ cup chopped fresh basil
- Salt & pepper to taste
HOW DO I MAKE BASIL BUTTER GLAZED SALMON?
In a small sauce pan, begin to melt 3 tablespoon of butter. Add the juice of 1 lemon, 1 ½ teaspoon of minced garlic and ¼ cup of chopped fresh basil. Continue to simmer until the ingredients are well combined, then set aside.
In a large skillet, begin to heat 4 tablespoon of olive oil. Once hot, add 3 salmon fillets and cook for approximately 3-4 minutes on each side.
When the fish is almost finished, begin to spoon the basil glaze over the fish. Transfer the fish to a serving dish and add additional lemon juice and salt & pepper, if desired.
