These Almond Butter Chocolate Chip Rice Crispy Bars will knock your socks off!
You won't be able to get enough of these Almond Butter Chocolate Chip Rice Crispy Bars. They are the perfect dessert and a great addition to lunch boxes for kids and adults alike!
Unlike the traditional rice crispy treat, there are no marshmallows or butter used. But don't be alarmed, these bad boys are just as delicious and much more addicting...so watch out!
This is such an easy, no-bake recipe that you can whip up in no time.
WHAT INGREDIENTS DO I NEED?
- 1 cup creamy almond butter
- 2 tablespoon coconut oil
- 1 ½ teaspoon vanilla extract
- 1 ½ cup chocolate chips
- 3 cups rice crispy cereal (or similar)
INGREDIENT SWAPS:
- I am a huge fan of almond butter, but feel free to use peanut butter, cashew butter, or sunflower butter.
- If you need a gluten free treat, make sure you use a certified gluten free rice cereal. Rice Krispies are not considered gluten free. They are made with malt, which comes from barley and may contain gluten; therefore, they are not labeled gluten free.
- If you want to make sure these goodies are vegan, swap out regular chocolate chips for your favorite vegan version.
HOW TO MAKE ALMOND BUTTER CHOCOLATE CHIP RICE CRISPY BARS:
Step 1: Microwave almond butter and coconut oil together. Stir in vanilla extract.
Step 2: Add rice crispy cereal and mix well.
Step 3: Add ½ cup of chocolate chips to the mixture.
Step 4: Press mixture into a parchment paper lined pan. Place in refrigerator to firm up.
Step 5: Top with melted chocolate chips. Place in freezer for 15-20 minutes to set.

Ingredients

Instructions

- Add ½ cup of chocolate chips to the mixture.
- Press mixture into a parchment paper lined pan. Place in refrigerator to firm up.
- In a small bowl, microwave remaining 1 cup of chocolate chips.
- Top the rice crispy treats with melted chocolate chips. Place in freezer for 15-20 minutes to set.
