Who doesn't love carrot cake? The yummy dessert with a soft, yet dense texture, that people often joke around to be "healthy" because it contains carrots in the batter. I mean really...it's hard to pretend this cake is healthy with an inch of cream cheese icing on top. But I'm not going to lie, it's super delicious.
I used to love carrot cake as a kid, but I probably haven't had a slice since I was in middle school. Which brings me to today...Recently, I had the urge to make a new type of granola for breakfast. I was getting tired of the same old berry and peanut buttery granola. There is only so much peanut butter a girl can take. Enter my new favorite recipe...drum roll please.....Carrot Cake Granola!!
WHAT INGREDIENTS DO I NEED?
- 3 cups oats
- 1 ½ cups shredded carrots
- 2 cups chopped almonds (or walnuts)
- 1 cup raisins
- 1 cup unsweetened coconut flakes
- ⅓ cup maple syrup
- ⅓ cup melted coconut oil
- 2 teaspoon ground cinnamon
- 1 teaspoon sea salt
- ½ teaspoon ginger
- ¼ teaspoon nutmeg

This recipe is wholesome, healthy, and full of simple ingredients. It is the perfect lighter granola recipe with no butter or refined sugar, and my little secret to enjoying the warm flavors of carrot cake without the added calories. How can something so healthy taste so good?!
HOW DO I MAKE CARROT CAKE GRANOLA?
The first thing you have to do to create my Carrot Cake Granola is combine all of the ingredients in a large bowl and stir. I prefer to use almonds in this recipe because they are my favorite! However, most carrot cakes are made with walnuts, so you can decide which nut you would like to add. Make sure all the ingredients are well mixed.
Next, place the granola mixture on a large baking sheet and bake at 350 degrees for approximately 25-30 minutes, stirring often. Once the granola is finished baking, remove from oven and let cool. It will become more crunchy as it cools down. I love how easy it is to make homemade granola.
This wonderfully simple granola is a great option for breakfast or as a snack. Keep some on hand at all times. It's healthy eating made easy!

Ingredients

- Preheat oven to 350 degrees.
