Cheesy Cauliflower Dippers: A delicious vegetarian recipe for kids (and adults), packed with super nutritious cauliflower!

Does anyone else have kids that are obsessed with dipping food? My kids will eat anything, as long as they can dip it.
While usually I am annoyed that I have to give them a pile of ketchup or BBQ sauce with every meal, I don't mind when it comes to eating these Cheesy Cauliflower Dippers.
WHAT INGREDIENTS DO I NEED?
- 1 head of cauliflower
- ½ cup all-purpose flour (gluten free if desired)
- 1 cup finely shredded mozzarella cheese
- 1 egg
- dash of salt/pepper

I have to be honest, as much as I'd love to say my kids always eat their veggies, one is not the biggest fan. It's always a struggle to get him to eat any type of vegetable.
However, he loves these crispy, savory Cheesy Cauliflower Dippers. They are tasty and a delicious way to sneak in some healthy cauliflower into your family's diet.

HOW DO I MAKE CHEESY CAULIFLOWER DIPPERS?
Start by adding 1 head of cauliflower to a food processor. Pulse until you have a crumbly texture.


Next, combine the cauliflower with ½ cup flour, 1 cup of finely shredded mozzarella cheese, 1 egg and a dash of salt & pepper. Mix well.
Spread mixture onto a prepared baking sheet (I line mine with parchment paper). Bake at 350 degrees F. for approximately 45 minutes.

These homemade Cheesy Cauliflower Dippers are a great snack or side option. Serve with marinara, ketchup, hot sauce or just on their own.
