These Gluten Free Caramel Apple Muffins are perfectly fluffy and sweet..but not too sweet. They are my new favorite autumn goodie to warm up with.

This time of year pumpkins are normally all the craze. But to be honest, I'm all about apples right now! Fall is the best time of year for apples, apple picking, apple cider, apple pies, and the quintessential Halloween treat caramel covered apples!

I'm pretty sure everyone has tried a caramel covered apple sometime in their life. Honestly, who can say they don't like apples, caramel, and your choice of candy crumbled on top?!
I always loved the "idea" of a caramel covered apple, but hated that your teeth would feel like they are breaking apart every time you would bite into one.
Originally, I created a gluten free muffin version of a caramel covered apple using Glutino All Purpose Flour Mix. However, they no longer have this product on shelves. You can use King Arthur or Bob's Red Mill. Both are a perfect mix to use as a base for your favorite baked good recipe.
I created these Gluten Free Caramel Apple Muffins because I wanted to have something healthy, slightly sweet, and allergy safe for family and friends to enjoy.

Fall and baking seem to go hand in hand in my house. I love to bring my light versions of baked goods to parties, so that people can see not every "healthy" food option has to be bland and boring.
These muffins are overflowing with everything apple! Apple pieces, apple cider vinegar, and apple sauce. To add the sweet caramel taste, I placed half of a soft caramel in the batter, as well as a drizzle over the top of each muffin. Yumm!
WHAT INGREDIENTS DO I NEED?
- 2 cups Gluten Free All Purpose Flour Mix (You can always use regular flour as well. I have used both)
- 4 oz unsweetened apple sauce
- 2 eggs
- 1 teaspoon cinnamon
- ½ teaspoon vanilla extract
- ½ teaspoon ginger
- ¾ teaspoon nutmeg
- ½ cup almond milk (or preferred)
- 2 tablespoon apple cider vinegar
- 1 chopped apple (peel removed) - I used Granny Smith, use whatever your prefer.
- Soft Caramels (plus additional for topping)- These sugar free caramels are a great option.

HOW DO I MAKE GLUTEN FREE CARAMEL APPLE MUFFINS?
To create these addicting muffins, start by preheating your oven to 375 degrees F.
In a large mixing bowl, whisk together all of the dry ingredients. Add almond milk, apple sauce, apple cider vinegar and eggs. Mix well until you have a smooth batter. Next fold in 1 finely chopped apple (with the skin removed).

Spoon your batter into a prepared muffin pan. Slice the caramel in half and place the, in the center of each muffin. Bake the muffins for approximately 15 minutes, and let them cool completely before removing.

If you would like to add the caramel drizzle on top, melt a few of the soft caramels in the microwave (approx. 20-30 seconds). Then spoon it over top. Let the caramel cool before serving the muffins.

These muffins are a perfect Halloween treat! Your little ghosts and goblins will devour them in no time!
