WHAT INGREDIENTS DO I NEED TO MAKE THIS GLUTEN-FREE BREAD RECIPE?
- 1 packet of active dry yeast
- 3 tablespoon sugar
- 1 ½ cups milk (almond milk, if preferred)
- 3 cups gluten free flour (Bob's Red Mill, or best gluten-free flour blends)
- ½ teaspoon salt
- 4 tablespoon butter - divided (dairy free butter, if preferred)
- 2 large eggs
- ⅓ cup raisins
- ¼ cup brown sugar
- 3 teaspoon cinnamon

HOW DO I MAKE GLUTEN FREE CINNAMON RAISIN BREAD?
Start by heating your milk in the microwave for 1 minute. Remove and stir in the yeast and sugar. Let it sit for about 10 minutes, or until it is active and frothy.

In a large bowl, stir together the dry ingredients (flour, salt, and raisins). Add the yeast liquid, along with 3 tablespoon of melted butter and 2 eggs. No need to use a stand mixer, or dough hook, I simply used a spatula to fold everything together.
Once the batter is mixed, cover with a piece of plastic wrap and let it rise on your counter, or in a warm area for about 1-2 hours.
While the dough is rising, whisk together brown sugar and cinnamon. Set aside for now.

Remove dough from bowl and place on a non stick mat or parchment paper. Form the dough into the same length as the loaf pan you will be using. Brush with 1 tablespoon of melted butter and sprinkle with cinnamon sugar mixture, reserving a little to top the bread with.
Carefully roll the dough to create swirls of cinnamon in the middle of the loaf. Place the dough in your greased loaf pan and top with additional cinnamon sugar.
**Note this gluten free bread dough is very delicate. Try to be as gentle as possible. I opted to pick up the parchment paper and plop the dough directly into the loaf pan, instead of trying to pick it up and transfer it. It may not be pretty, but once it's baked it looks and tastes delicious!

Bake the loaf at 350 degrees F for approximately 40-45 minutes. Once cooking time is complete, remove from oven and let the loaf cool to room temperature in the pan before transferring to a wire rack.

This addicting cinnamon bread is perfect with breakfast, brunch, as a dessert or snack. The texture is delicate with intense cinnamon flavor. Print the recipe card below, so you can begin to enjoy slices and slices of this delicious bread.
If you happen to have a few slices left over after a couple days, try turning them into French toast. You won't regret it!
