Not only does this recipe come together in just minutes, making it perfect for busy weeknights, it's also much lighter than the traditional mayo based version.

WHAT INGREDIENTS DO I NEED?
- 2 cups frozen peeled & divined shrimp (cooked)
- ½ cup Greek yogurt plain
- 1 tablespoon lemon juice
- 1 teaspoon curry powder
- 2 celery stalks
- salt & pepper to taste
- Hot dog buns (or preferred)
- desired amount of lettuce, arugula, or spring mix

HOW DO I MAKE EASY CURRIED SHRIMP ROLLS?
Thaw 2 cups of shrimp, then chop into small pieces, along with the celery stalks.
In a large bowl, combine the chopped ingredients with Greek yogurt, lemon juice, curry powder, and salt/pepper. Mix thoroughly. Store in an airtight container in your refrigerator until you are ready to serve.

Build your Curried Shrimp Rolls by laying desired amount of lettuce inside a hot dog bun (toasted if desired), then top with heaping spoonfuls of shrimp.
