Trust me when I say these Gluten Free & Dairy Free Chocolate Chip Cookies will be the best thing you do all day.
There is just something about a good old fashioned chocolate chip cookie that always makes me smile. They are simple, sweet, comforting and a childhood must have. It's hard to imagine growing up without enjoying a gooey cookie.
Now imagine that you or your child are not able to consume dairy or gluten. It would totally suck, wouldn't it? No more simply buying the first cookie you see on the shelf. You have to either search endlessly for a store bought version that is safe to consume, or opt for not having any at all.
This is exactly why I decided to create these Gluten Free & Dairy Free Chocolate Chip Cookies. It's a melt in your mouth recipe that will bring a smile to the face of any allergy concerned person in your life.
WHAT INGREDIENTS DO I NEED?
- 1 ½ cups gluten free flour (I used King Arthur: Measure for Measure)
- 1 egg
- 4 tablespoon natural maple syrup
- 4 oz applesauce
- 3 tablespoon melted coconut oil
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ½ cup chocolate chips (dairy free or carob chips)
HOW DO I MAKE GLUTEN FREE & DAIRY FREE CHOCOLATE CHIP COOKIES?
Start by blending together 1 egg, 4 tablespoon natural maple syrup, 4 oz applesauce, 3 tablespoon melted coconut oil and 1 teaspoon vanilla extract in a large bowl.
In a separate bowl, combine the following dry ingredients:
- 1 ½ cups gluten free flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
Next, carefully blend the dry ingredients into the wet ingredients (adding a little at a time). Once the ingredients are mixed, stir in ½ cup of dairy-free chocolate chips or carob chips.
Spoon mounds of the batter onto a prepared baking sheet and bake at 350 degrees F for approximately 10-12 minutes. (I used an ice cream scoop because I wanted large cookies. If you use a smaller scoop, your cooking time may need to be reduced slightly. Keep an eye on them.)
