Make your own homemade potato chips, baked with a hint of oil and salt & pepper. No fryer needed for this healthy version!

Finding yummy, healthy snacks can be hard. But this simple recipe for Homemade Baked Potato Chips is tried and tested by yours truly, and totally the way to go! Golden brown , with the perfect crunch, you may end up wanting to make a few batches!
WHAT INGREDIENTS DO I NEED?
- 3 Russet potatoes
- Oil spray (vegetable, olive, avocado oil or preferred)
- Salt/Pepper to taste
- Optional additions for different flavors/ spice: old bay seasoning, onion powder, garlic powder.

HOW DO I MAKE HOMEMADE POTATO CHIPS?
Start by thinly slicing the potatoes using a mandolin slicer, or carefully with a knife. Then place the sliced potatoes in a large bowl with water. Let the slices sit for about 20 minutes.
I often drain the bowl after about 30 minutes, then soak in new clean water. You will see the water become milky white, which is the starchiness leaving the chips.
After you remove most of the starch from the chips, lay them out in a single layer on a paper towel and let them dry as much as possible. The drier they are before they go into the oven, the crispier the chips will become. If the slices are still wet when baking, they will end up "steaming" in the oven, more than "baking." This results in a soft, chewy potato chip. Which no one really likes, am I right? The crispier the better!

Preheat oven to 400 degrees F. Spray your baking sheets with oil, place slices onto a baking sheet, then spray the top of the slices with additional oil. Sprinkle with salt & pepper. Bake for approximately 15-20 minutes.
**Because there tend to be hot spots in ovens, check frequently and pull off any that are already browned.
Remove chips from sheet to cool. They will become more crispy as they cool.

Instructions

- Place sliced potatoes in a large bowl with water. Let the slices sit for about 20 minutes. Drain water, and repeat with new clean water.
- After most of the starch has been removed from the potato slices, drain water and place slices on paper towels to dry.
- Spray baking sheets with oil, place potato slices onto a baking sheet, and top with additional oil spray. Sprinkle with salt & pepper.
- Bake at 400 degrees F for approximately 15-20 minutes. Check frequently and pull off any that are already browned.
- Remove chips from sheet to cool. They will become more crispy as they cool.
