This Winter Kale Salad is one you will definitely want to make all year long.
Just because it's winter, doesn't mean you can't enjoy a fresh, light salad. I say, keep the salads coming. The more the merrier!

Red beets, green kale and white feta, it's a festive little dish that just screams "ho ho ho". The tangy homemade vinaigrette is an ideal addition that will keep everyone coming back for more. I've made it for my family once or twice, and plan on making it this year for a Christmas gathering.

You know how I love a good, healthy, EASY recipe. Especially around the holidays, when you have enough to deal with already. Luckily, this Winter Kale Salad is as easy as it gets!
WHAT INGREDIENTS DO I NEED?
- 1 large bunch of kale
- 14 oz can of sliced beets- drained & chopped
- ⅓ cup feta cheese
- ½ cup chopped walnuts
- 2 teaspoon dijon mustard
- 1 tablespoon honey
- ½ cup olive oil
- 3 tablespoon apple cider vinegar
- dash of salt/pepper
HOW DO I MAKE A WINTER KALE SALAD?
Start by washing and tearing the kale away from steams, then into bite sized pieces.
In large bowl, combine kale with 14 oz can of sliced beets- drained & chopped, ⅓ cup of feta cheese, ½ cup of walnuts- chopped.
In a separate small bowl combine the following ingredients to create the vinaigrette:
- 2 teaspoon dijon mustard
- 1 tablespoon honey
- ½ cup olive oil
- 3 tablespoon apple cider vinegar
- dash of salt/pepper
When you are ready to serve, you have the option to mix in the dressing, or set it on the side for everyone to add their desired amount to their own plates.
