But, if you really want something new and exciting, you have to give this Mini Breakfast Pizza a try! It's a super tasty, easy dinner recipe, with adult and kid-friendly versions.
No more sticky pizza dough! This recipe uses mini naan bread as your pizza crust. Perfect for individual slices and letting everyone be creative with their own pizza.

WHAT INGREDIENTS DO I NEED FOR MINI BREAKFAST PIZZA?
Adult Version:
- 3 mini naan bread
- ½ red bell pepper - chopped
- ⅓ red onion - chopped
- 2 tablespoon olive oil
- ½ cup shredded mozzarella cheese
- 1 cup fresh baby spinach
- 3 large eggs
- dash of salt & black pepper
- 2-3 slices of preferred bacon, cooked sausage or ham (I used turkey bacon)
Optional additions: cherry tomatoes & mushrooms.
Kid-Approved Version:
- 3 mini naan bread
- ½ cup shredded cheddar cheese
- 6 large eggs
- 2-3 slices of preferred bacon (I used turkey bacon)

HOW DO I MAKE MINI BREAKFAST PIZZA?
In a large skillet, start by sauteeing the chopped onion and bell pepper in olive oil over medium heat. Once the ingredients become tender, remove from heat and set aside for now.
In a separate skillet, cook the bacon until crispy. Then, remove from heat and let cool before you crumble the slices.
In the same (or different) skillet, begin to cook 6 scrambled eggs for the kids breakfast pizzas. Once they are cooked and you have a desired texture for the eggs, remove and set aside.

Preheat your oven to 400 degrees F.
Place the mini naan bread on a large baking sheet, and sprinkle with mozzarella cheese or cheddar cheese, depending on which version you are making. My kids prefer cheddar cheese, which is why I opted for that with the kids version. Feel free to use whatever cheese your kids like.
Top the kids naan with crumbled bacon and scrambled eggs.
Layer the adult naan breads with the veggies, baby spinach, and bacon pieces. Create a small well in the middle of each pizza and carefully crack an egg in the center. Top with a dash of salt & cracked black pepper.

Place the baking sheet in your preheated oven and bake for approximately 10-15 minutes, or until your naan is golden brown, slightly crispy, the cheese is melted and the cracked eggs have reached your desired doneness.
Remove the pizzas from your oven and let cool slightly before serving.
