One Pot Lemon Shrimp Quinoa is a gourmet meal with no effort. It's a perfect weeknight recipe for the whole family.

There are not enough hours in the day! Life is full of craziness, and sometimes all you want is an easy warm dinner to enjoy, am I right? One-pot dinners are a favorite of mine when I have an insane day.
When you find yourself having one of those days, nothing is better than throwing a bunch of ingredients into one pot and coming back to a fully cooked meal. My One-Pot Lemon Shrimp Quinoa is an easy set and go dish that will help soothe your mind and body after one of your hectic days.

WHAT INGREDIENTS DO I NEED?
- 1 lb medium raw shrimp- peeled & deveined
- 1 cup quinoa
- ½ white onion
- 1 teaspoon minced garlic
- 2 cups water
- salt & pepper to taste
- Approximately 2 tablespoon lemon juice
- ¼ cup fresh parsley + additional for garnish
- 2-3 tablespoon olive oil

HOW DO I MAKE ONE-POT LEMON SHRIMP QUINOA?
Season your shrimp with salt & pepper.
In a large skillet begin to heat olive oil. Add your shrimp, continue to sauté until pink, remove and set aside for now.

Add chopped onion to the same skillet. Sauté until tender and translucent. Add minced garlic and continue to simmer until fragrant, then add your quinoa and water.
Lower heat and cover pot. Simmer until quinoa is cooked and fluffy.

Once your quinoa is cooked, add the shrimp back to your skillet along with chopped parsley and lemon juice. Stir everything together and remove from heat.
Garnish with additional fresh parsley, if desired.

This looks yummy! If I used frozen, already cooked shrimp how would I change the recipe? Thanks!

Depending if you thawed the shrimp before adding to the skillet...there most likely would be more liquid in the skillet, so you would have to cook a little longer to reduce it. Nothing crazy to change within the recipe. 🙂
