When I hear the word pesto, I normally think of the Italian version that includes basil, Parmesan cheese and pine nuts. It is a delicious topping to say the least. But today is a new day!
Swap out your usual Italian pesto for this spicy Mexican version. Spicy Cilantro & Jalapeno Pesto my new favorite condiment for sandwiches, grilled shrimp, or to dip chips in. Creamy, super spicy and made by simply blending 5 ingredients.

HOW DO I MAKE SPICY CILANTRO & JALAPENO PESTO?
Begin by removing the cilantro leaves from stems (approximately 3 cups) and place in a food processor. Add the following ingredients and blend until you have a smooth texture. (You may have to pause and scrape the ingredients down during the blending process).
- ½ cup pickled jalapenos
- ¼ cup olive oil
- ½ cup raw cashews
- ¼ teaspoon salt & pepper
Store in an airtight container and place in refrigerator until you are ready to use.
This homemade pesto with a twist will bring any dish to life. It would be silly not to make it right away!

- ½ cup pickled jalapenos
