What happens when you add Greek flavors to an all-American side dish? You get this INSANELY delicious Tzaztiki Potato Salad!
What would a spring or summer picnic be without the addition of a potato salad? It's a classic! Much like fireworks on the fourth of July, margaritas on Cinco de Mayo and turkey on Thanksgiving. I couldn't imagine going to a BBQ without some type of potato salad also in attendance.
But let me tell you a little secret. I have a new version that will blow your traditional salad out of the water! This Tzatziki Potato Salad is cool, creamy and overflowing with flavor. You won't find any mayo, mustard or relish here. Make way for Greek yogurt, cucumber, dill and feta.
HOW DO I MAKE TZATZIKI POTATO SALAD?
To create this fun spin on the classic potato salad, start by chopping 1 ½ lbs of baby red potatoes into bite sized pieces.
Boil them for approximately 10-15 minutes, or until slightly soft. Drain and let cool.
Next, in a large bowl, combine potatoes with the following ingredients and stir until everything is evenly mixed:
- 1 cup chopped cucumber
- ¾ cup Greek yogurt 0% plain
- ½ cup chopped red onion
- ⅓ cup fresh dill
- ½ cup fresh parsley
- ½ cup crumbled feta
- 2 tablespoon olive oil
- Juice of 1 lemon
- dash of salt/pepper
Store in an airtight container in refrigerator until you are ready to serve.

Tzatziki Potato Salad
Ingredients
- 1 ½ lbs baby red potatoes
- 1 cup cucumber
- ¾ cup Greek yogurt 0% plain
- ½ cup red onion
- ⅓ cup fresh dill
- ½ cup fresh parsley
- ½ cup crumbled feta
- 2 tablespoon olive oil
- Juice of 1 lemon
- dash of salt/pepper
Instructions
- Chop potatoes into bite sized pieces.
- Boil for approximately 10-15 minutes, or until slightly soft. Drain and let cool.
- In a large bowl, combine potatoes with remaining ingredients and stir.
- Store in an airtight container in refrigerator until you are ready to serve.
