In the midst of winter sometimes all you want is a light egg salad. No heavy casserole or stews, just a deliciously cool egg salad. Which is why I recently made some of this Perfect Pesto Egg Salad. A stress free recipe that is ready in 5 minutes. Don’t we all need a quick, simple recipe after the hustle and bustle of the holidays?
Is there someone in your life that is hard to convince to leave out the mayo in their recipes? Trust me, if this recipe doesn’t do it then nothing will. The addition of my homemade pesto is a great alternative to mayonnaise. Less calories, fat and much more flavorful. (Feel free to add your favorite store bought pesto as well).
To create this Perfect Pesto Egg Salad, roughly chop 2 celery stalks, 1/3 cup red onion and 5 hard boiled eggs. Then, combine the chopped vegetables and eggs with 1/2 cup of pesto. Add a dash of cracked black pepper and stir well. Simple as that you are ready to serve it on bread, crackers, lettuce or enjoy it as is. (Forget what I said before, it will probably take you less than 5 minutes to make.)

- 2 celery stalks
- 1/3 cup red onion
- 1/2 cup pesto
