This is an easy and delicious, homemade bread. Crusty on the outside, soft in the middle, with hints of cinnamon and raisins.

If I were to tell my younger self that I would turn into a baker, I wouldn't have believed it. Never did I imagine spending the time to bake my own bread or cakes. Turns out, I love it! Especially baking rustic loaves in my dutch oven; Honey Oat Artisan Bread, Gluten Free Artisan Bread, and Gluten Free Garlic Rosemary Artisan Bread to name a few.
Even though I follow a gluten free diet, that does not mean I don't like to bake for the rest of my family. This Cinnamon Raisin Artisan Bread came to fruition because my kids absolutely LOVE store-bought cinnamon raisin bread. I figured I'd give a homemade version a try in my dutch oven. It did not disappoint!
WHAT INGREDIENTS DO I NEED?
- 3 cups bread flour
- 1 ½ cup warm water
- 2 ¼ teaspoon active dry yeast
- 3 tablespoon light brown sugar
- ½ teaspoon salt
- ½ cup raisins
- 2 teaspoon cinnamon

HOW DO I MAKE CINNAMON RAISIN ARTISAN BREAD?
STEP 1: In a small bowl, stir together warm water, yeast and brown sugar. Set aside for about 5 minutes, or until it becomes active and foamy.
STEP 2: In a large bowl, whisk together flour, salt, cinnamon and raisins. Add the yeast water to the dry ingredients. Stir well, knead a few times to form into a ball, then place in a greased bowl. Cover with a towel or plastic wrap and let it rise for 3 hours. **I placed mine in my oven with the oven light on. This creates a consistent temp for the dough to rise.

STEP 3: After rising, place the dough on a piece of floured parchment paper.
STEP 4: Preheat oven to 450 degrees F with your Dutch oven inside. Once the oven reaches temp, carefully remove the Dutch oven and place your bread dough inside (with the parchment paper). Cover and bake for 30 minutes. After the initial 30 minutes, remove the lid and bake for another 5 minutes or until you have a golden crust.

As mentioned in my previous bread recipes that use a Dutch oven, be sure to preheat it in your oven. Placing the bread dough into the warm Dutch oven results in a deliciously crispy crust.
STEP 5: Carefully remove the Dutch oven and let the bread rest on a wire rack until it is completely cooled.
