It's hard to beat a classic chicken salad. But this Pineapple Chicken version is easy, healthy and perfect for summer.

Finding an easy meal prep recipe that actually keeps well in the fridge AND you don’t get sick of is surprisingly hard to find. Luckily, this Pineapple Chicken Salad will be your new favorite healthy, high-protein lunch! It's a quick, no-fuss recipe is perfect for meal planning.

WHAT INGREDIENTS DO I NEED?
This delicious recipe uses creamy Greek yogurt for an extra protein boost and is loaded with fresh, flavorful ingredients. No mayo here!
- 3 cups cooked chicken (Baked, Grilled, Rotisserie, whatever you prefer)
- ½ cup celery
- 1 cup grapes
- 1 ¼ cups pineapple (fresh or canned)
- 1 cup greek yogurt - plain
- salt & pepper to taste

HOW DO I MAKE PINEAPPLE CHICKEN SALAD?
Start by chopping the chicken, celery, grape and pineapple into small pieces.
Place all of the chopped ingredients into a large mixing bowl. Stir in greek yogurt and lemon juice. Season with salt & pepper to taste. Mix well then chill in your refrigerator until you are ready to serve.

PINEAPPLE CHICKEN SALAD SERVING SUGGESTIONS:
- Toasted Bread: Make a sandwich with your favorite bread, I prefer sourdough.
- Lettuce Wraps: Spoon into large lettuce leaves, like romaine or butter/bibb, for a low-carb option.
- On a salad: Place on top of a bed of mixed greens for a salad, I love an Arugula-Spinach mix.
- In a wrap or pita: Roll it in a tortilla or soft pita.
