This Tomato Caper salad is bright and packs tons of flavor from fresh herbs, capers, and a light garlic dressing.

I don’t know about you, but I love hot weather, parties outside and yummy, spring flavors! I'm not really into the “comforting” heavy recipes of winter. Give me all of the cold salads, grilled veggies and fresh fruits.
There is just something about the simplicity of spring and summer dishes that make me smile. This Tomato Caper Salad is no exception. It’s the perfect compliment to any meal and super easy to prep.

WHAT ARE CAPERS?
If you are not familiar with capers, some of you may be asking "what are capers?" "What do they taste like?"
Capers are the un-ripened flower buds of capparis spinosa, a prickly, perennial plant which is native to the Mediterranean and some parts of Asia. The small, green herb buds lend a sour and salty flavor to salads, dressings, sauces, vegetables and a variety of main dishes.
WHAT INGREDIENTS DO I NEED FOR TOMATO CAPER SALAD?
- 4 tomatoes
- ¾ cup red onion
- ½ cup fresh parsley
- 2 Tbsp capers
- 3 tablespoon olive oil
- 3 tablespoon lemon juice
- 1 teaspoon minced garlic
- dash of salt & pepper
- optional: crumbled feta

HOW DO I MAKE TOMATO CAPER SALAD?
For this recipe, you will start by chopping 4 tomatoes, ¾ cup red onion and ½ cup of fresh parsley. Combine all of them in a large bowl.
Add 2 tablespoon capers, minced garlic, olive oil, lemon juice and salt/pepper to your chopped ingredients. Toss well.
Top with desired amount of crumbled feta and store in your refrigerator until you are ready to serve.

Ingredients
