Fire Cracker Lime Chicken is an easy, juicy, tender chicken recipe that is perfect in every way. Start with a simple marinade and end up with a flavor packed meal everyone will love.

Anything cooked on a grill, with slight burn marks, is totally fine by me. Nothing is better than perfectly cooked chicken, tender veggies, or in my husband's words "a big slab of steak" cooked over an open flame. There are a ton of grilled chicken recipes out there, but this Fire Cracker Lime Chicken is one of my all time favorites!
WHAT INGREDIENTS DO I NEED?
- 1-2 large chicken breasts
- 2 limes
- 2 tablespoon dijon mustard
- ½ teaspoon cayenne pepper
- 1 teaspoon paprika
- 2 tablespoon jalapeno ketchup
- 2 tablespoon olive oil
- salt/pepper

This healthy & flavorful recipe is a great alternative to the same old grilled chicken dinner. The combination of spicy cayenne and tangy lime juice creates an amazingly addictive meal.
HOW DO I MAKE FIRE CRACKER LIME CHICKEN?
To create the marinade, combine the juice of 2 limes, 2 tablespoon dijon mustard, ½ teaspoon cayenne pepper, 1 teaspoon paprika, 2 tablespoon jalapeno ketchup, 2 tablespoon olive oil, and a dash of salt/pepper. I like to use Heinz jalapeno ketchup for this recipe because it adds a little extra heat that I love. But, feel free to use regular ketchup for your recipe if you like.
Next, slice the chicken breast into strips, pour marinade over it and place in refrigerator for at least 1 hr. I prefer to slice the chicken so the marinade covers more of it. The longer it marinates, the better! I typically put the chicken in the marinade in the morning and let it sit all day.
When you are ready to start cooking, place the marinated chicken on your grill, and cook for about 10-15 minutes, depending how thick your chicken breasts are. Once chicken is finished grilling, remove and let cool. You can enjoy the chicken as is, or chop it into smaller chunks and top a salad or pasta with it. There are so many possibilities!
