This Southwest Loaded Cornbread is sweet, spicy, fluffy, unbelievably easy to make and incredibly addicting!

There is nothing better than a warm piece of cornbread! I find it to be such a comforting, family perfect side dish for the any meal, especially with a big bowl of soup or chili.
I may be committing a "homemade baking" crime by saying I like to use a boxed mix for this recipe. But, it makes it so much easier for crazy weeknights or times I don't have all the ingredients for homemade cornbread.
Using a boxed cornbread mix doesn't have to be boring. As this Southwest Loaded Cornbread recipe will prove, you can add your favorite ingredients to transform any mix into an amazing, delicious, unique bread.

WHAT INGREDIENTS DO I NEED?
- 1 box of your favorite cornbread mix + ingredients listed on box
- ½ cup corn kernels
- ¼ cup jalapenos- chopped
- 3 scallions- chopped
- 2 teaspoon cracked black pepper
This Southwest Loaded Cornbread is hands down my favorite cornbread. For this recipe I have used both Hodgson Mill Gluten Free Cornbread Mix and Jiffy Corn Muffin Mix but feel free to choose your family's favorite mix. I also use Almond Breeze- Vanilla Reduced Sugar Milk, instead of regular milk, for a little added sweetness without adding sugar or unnecessary calories to the bread.

This recipe is perfect for your next potluck or cookout! Be sure to make enough for everyone though....it will disappear right before your eyes. If my husband and I can crush one pan of this cornbread between the two of us, I'm pretty sure you will need to bring more than one batch. I'm still cursing myself for not making enough for a recent holiday party. There were some pretty upset people when they realized it was all gone.
HOW DO I MAKE SOUTHWEST LOADED CORNBREAD?
To start, prepare the cornbread mix according to package instructions. Then, stir in ½ cup of corn kernels, ¼ cup chopped jalapenos (I used pickled instead of fresh), 3 scallions chopped, and 2 teaspoon of cracked black pepper. Stir until just combined and all the ingredients are mixed throughout.

Preheat your oven according to cornbread mix directions. Pour batter into a prepared 9x9 baking dish.
If you have extra ingredients leftover, you can add additional corn, jalapenos, scallions to the top of the batter before baking.
Bake your batter according to package directions. **Note, the baking time may take 5-10 minutes longer than the package states, because of the added ingredients.

This "homemade" style corn bread turns out soft & absolutely delicious every time! We could not stop eating it!
