This easy recipe creates classic thin and flexible crepes we all love, but loaded with protein and cinnamon flavor.

Crepes are the ultimate breakfast treat, with their thin, flexible layers, perfect for smothering or filling with your favorite ingredients - fruit preserves, chocolate, whipped cream, or even savory ingredients.
While crepes are usually not the "healthiest" choice for breakfast, these Protein Cinnamon Crepes will blow you out of the water. It’s an easy recipe, made with simple ingredients, but comes out restaurant-level quality.

WHAT IS THE DIFFERENCE BETWEEN CREPES AND PANCAKES?
Both are made with very simple batters, but result in very different outcomes. Pancakes depend on leavening agents like baking powder or baking soda, which makes them fluffy and allows them to rise while cooking.
Crepes, however, lack in leavening agents, resulting in a thin and flat consistency. Crepes cook very fast and stay soft enough to fold, roll, or stack.

WHAT INGREDIENTS DO I NEED?
- ½ cup vanilla protein powder
- ½ cup all-purpose flour (gluten free if needed)
- ⅓ cup egg whites (or approximately 2 large egg whites)
- 1 cup vanilla Unsweetened almond milk
- 2 tablespoon coconut oil (melted)
- 1 teaspoon vanilla
- 1 tablespoon cinnamon
- dash of salt

HOW DO I MAKE PROTEIN CINNAMON CREPES?
In a large bowl, whisk together all the ingredients until smooth. Set aside for about 10 minutes to let the batter rest.
Being to heat a large nonstick skillet (or griddle) to medium heat. Spray with nonstick cooking spray or lightly grease with butter. Pour a thin layer of the batter in the middle of your pan (approximately ½ cup).
As the edges begin to set, and you can easily check to see if bottom is lightly golden, carefully flip and cook the other side for about 30 seconds more. Then, remove from pan, stack on a plate and cover with foil to keep warm while you finish the remaining batch.
Serve the crepes as is, or add your favorite toppings like nut butter, berries, powdered sugar or natural syrup. (You can usually find me rolling them up and running out the door with one in my hand!)
