This On The Go {Gluten Free} Breakfast Sandwich is the easiest make-ahead breakfast recipe you could hope for. No more stressing about what to feed the kids (or yourself) early Monday morning. These sandwiches are the perfect grab and go meal for the entire family!

Does it seem like everyone has crazy busy schedules, or is it just me? Lately, I have run out the door (on more than one occasion) and totally forgotten to eat breakfast. I hate missing breakfast! Not only do I love breakfast foods, but it is so important to start your day off right and have a healthy meal. I preach this all the time to my personal training clients and I know I'm such an idiot for being too busy to remember to eat.
There are times when I grab a protein bar or shake on the fly, but after a while those can get old. Recently I made these On The Go {Gluten Free} Breakfast Sandwiches and they are amazing. They are perfect for busy mornings, or mornings when we seem to be running a little behind. Make a batch (or two) and store them in your refrigerator or freezer. They are my new favorite breakfast!
WHAT INGREDIENTS DO I NEED?
- 6 eggs
- 6 preferred gluten free english muffins
- Shredded cheddar cheese
- 6 slices cooked turkey bacon
- Fresh arugula/spinach mix
- optional: hot sauce

HOW DO I MAKE ON THE GO BREAKFAST SANDWICHES?
Start by preheating your oven to 400 degrees F.
Slice open the English muffins, then place them on a prepared baking sheet. Scoop out a small amount of one side of the English muffin, to create a small well for the eggs to sit in. Crack an egg into each of the wells.
Add desired amount of shredded cheddar cheese to the other half of the English muffin.
Bake for approximately 15 minutes, or until the egg is firm and the cheese is melted. Carefully remove from oven and let cool.

Once the sandwiches have cooled, add cooked bacon, fresh arugula and hot sauce. Wrap them in plastic wrap or place them in plastic bags and store in your refrigerator or freezer until you are ready to enjoy.
When morning comes, pop one in the microwave and you are ready to go!

these look wonderful!
i will slightly scramble my egg in the muffin cup so i don't have a lump of yolk in the middle, and add some onion and bell pepper to bake with the egg. kinda like an omelet sandwich.
thanks for the great recipe! 🙂

I love these English muffins. I don't add cheese but I do spread avocado (1/4 on each side) like a condiment - the extra fat leaves me feeling full until lunch! I don't bake the eggs, I pan fry them over hard - it's a quick, easy and delicious breakfast!

This is so cool. Love that you can bake the eggs like that!
