As much as I love to say I am a fitness freak, I am equal parts food lover. Waffles being one of those foods that I just can't live without. Especially, this lighter version of Savory Cornbread Waffles. It's a must make! Not only is it gluten free and refined sugar free, but also uses Mazola® Corn Oil instead of olive oil.

I made a gigantic pot of soup this past week and needed a delicious side to go with it. Without hesitation, I knew exactly what I was going to make. My Savory Cornbread Waffles! They are fluffy, flavorful and ready in a flash. Waffles are no longer just a breakfast food anymore!
With a few simple swaps of ingredients to make them lighter, you will wonder why you haven't made more things in a waffle maker before.
HOW DO I MAKE SAVORY CORNBREAD WAFFLES?
Start by combining the following dry ingredients in a large bowl: 1 ½ cup corn meal, 1 cup gluten free flour, 2 teaspoon baking soda, and a dash of salt and pepper.
Stir in 2 eggs with ⅓ cup Mazola® Corn Oil and 1 ¼ cup of almond milk, instead of regular milk. Mazola® Corn Oil is an all-purpose cooking oil that is a smart heart-healthy choice for your family. I prefer it to other oils because it has a neutral taste that won’t negatively impact the taste of ingredients, so it lets the natural flavor of your food stand out.

When the batter is complete and your waffle iron is ready, carefully pour a desired amount into the molds. I used the low-medium low setting on my waffle maker. Trust me, they cook faster than you think.
