A foolproof, easy biscotti recipe made with fresh bananas and chocolate chips.
In addition to all the usual tempting cookies and treats, Biscotti are hard for me to say no to. Crisp on the edges and just the tiniest bit soft in the center, they are perfect for dunking in a mug of coffee or tea.
I've made Chocolate Peppermint, Pumpkin Spice and Orange Cranberry Biscotti. But this new {Gluten Free} Banana Chocolate Chip Biscotti is a MUST MAKE!
These light and crunchy biscotti are wonderful and chocolatey, but not too sweet. Just as they should be, they are perfectly dense and crunchy.
WHAT INGREDIENTS DO I NEED?
- 2 cup gluten free flour
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ cup natural maple syrup
- 1 egg
- 2 Tbsp coconut oil melted
- 2 bananas mashed
- ½ cup semi-sweet chocolate chips
HOW DO I MAKE BANANA CHOCOLATE CHIP BISCOTTI?
In a large bowl combine the following dry ingredients and stir:
- 2 cups gluten free flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
Next you will add the following wet ingredients to the bowl:
- ¼ cup natural maple syrup
- 1 egg
- 2 tablespoon coconut oil- melted
- 2 bananas- mashed
Once the ingredients are well combined, stir in ½ cup of semi-sweet chocolate chips. Spread the dough onto a piece of parchment paper. (I like to form it with my hands into a long rectangular shape, approximately ½-1 inch thick.) Place the dough on a plate and set in your refrigerator for approximately 20-30 minutes.
Remove from refrigerator and place on a prepared baking sheet. Bake at 350 degrees F for about 18 minutes.
Remove from oven and let cool. Slice the biscotti into strips. Bake for another 15-18 minutes.
Remove and let cool. They will become more crunchy as they cool down.
Fresh bananas and chunks of sweet chocolate makes these biscotti a treat to remember!
