They are light, buttery, and and loaded with pecans. A must make cookie recipe all year long!!
WHAT ARE PECAN SANDIES?
These cookies are basically a shortbread cookie with chopped pecans. They are crispy on the outside and chewy on the inside.
These cookies are melt in your mouth delectable. Sure to become a must on your dessert table.

WHAT INGREDIENTS DO I NEED?
- Gluten free all purpose flour (You can use almond flour, as well)
- Baking powder
- Salt
- Powdered sugar
- Vanilla extract
- Butter
- 1 egg
- Chopped pecans pieces and pecan halves
Tips for Making Gluten Free Pecan Sandies:
- Use room temperature unsalted butter so the dough will be easier to blend together.
- Have your egg at room temperature so they mix easily.
- I purchased already chopped pecans from my local grocery store but you could also buy them whole and chop them yourself.
- Follow the directions! Baking is not as forgiving as cooking.

HOW DO I MAKE GLUTEN FREE PECAN SANDIES?
Start by preheating the oven to 350 degrees F.
In a large mixing bowl, whisk together flour, baking powder, salt and powdered/ confectioner sugar.
In a separate bowl, mix together butter, vanilla and 1 egg until smooth. You can use an electric mixer or simply mix with a spoon.
Slowly mix together wet and dry ingredients. Then, stir in chopped pecans.
Using a small cookie scoop, or spoon, place dough on a prepared baking sheet. (I prefer to use parchment paper, rather than a silicone mat, for easier cleanup). One the top of each cookie place a pecan half.
Bake for approximately 10-11 minutes. Remove from the oven and let cool on the cookie sheet before moving to a wire rack.

Ingredients
- 2 ⅓ cup gluten free flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup powdered sugar
- 1 ½ teaspoon vanilla extract
- ½ cup butter - softened
- 1 egg
- ⅓ cup chopped pecans + pecan halves for topping
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl, whisk together flour, baking powder, salt and powdered sugar.
- In a separate bowl, mix together butter, vanilla and 1 egg until smooth.
- Slowly mix together wet and dry ingredients.
- Stir in chopped pecans and roll dough into small balls.
- Place dough on a prepared baking sheet. ( I prefer to use parchment paper). Press pecan halves into the center of each cookie.
- Bake for approximately 10-11 minutes. Remove from the oven and let cool on the baking sheet for about 15 minutes.

Ingredient list says baking powder instructions say baking soda. Which is it, powder or soda?

I followed the recipe but ended up with a dry mixture that is impossible to form into a ball. Is there a liquid ingredient missing from the ingredient list that would bring the mixture together?

Hi, thanks for the message! No there is no other liquid ingredient missing. But you could always add a bit more butter, or splash of milk/water, if your dough seems way too dry.
